Quick + Easy Vegan Baked Beans - Sweet, Smoky + Delicious!

Sorry I've been MIA guys. I have been working on TONS of recipes at night while making sure we get all of the Ashley's Naturals orders out during the day!

I'll be posting a lot of recipes today.

The first being - Quick + Easy Vegan Baked Beans. 


Sweet, Smoky, + Pig Free! 


1 can Organic Pinto Beans

1/2 c Organic Ketchup

1/4 c Organic Rice Vinegar

3 tbs Liquid Aminos

1/2 tsp Liquid Smoke

(don't skip the liquid smoke. It gives it that smoky bacon flavor)

1/4 Organic Sweet Onion - diced

1/4 Organic Green Peppers - diced

pinch of organic Thyme

1/2 tsp Paprika (smoked)

dash of Nooch (Nutritional Yeast)

1/8th tsp Mustard

1 Tbs Organic EVOO

Sea Salt to taste

1/4 c Molasses

1 tsp minced Garlic

1/4 c Coconut Sugar

1/8 c Maple Syrup


Start by sautéing the onions, green peppers, and garlic in a small sauce pan.

I eyeball everything because I cook from the soul. But I standardize these recipes for you :-) 

Add in all of the ingredients except the beans, coconut sugar + salt.

Bring the sauce to a simmer. Taste it and adjust seasoning to make it less sweet, or sweeter depending on how you like your beans. I like mine sweet + smoky! 


Add in the beans. 


Bring to a boil.

Reduce to a Simmer.



Add Coconut Sugar*


Cover and forget about them. 

for about 15 minutes that is.

Turn them off.


Add salt to taste. I didn't need any thanks to the liquid aminos.

They should be thick, saucy, rich, smoky, sweet, and delicious. 

If they get too thick, just thin with a little bit of water.

Thank me later. 

Sop them up with some cornbread. 


This was Justice's first time tasting baked beans, and he LOVES them.

He said "MOM!! I smell something sweet and tasty!"

Now he's eating a ramekin full. Great job mom. Justice approved!
