1 pot Rustic Soulfood Ramen, Vegan Style. + The best homemade vegan ice cream EVER!
So, today... Mom (I) wasn't feeling well. Whenever I'm having one of those days... Hun will help me prep dinner. I told him I would prefer to make a one pot dish and that I wanted something warm and filling. He suggested one of his favs., of course. Momma's Ramen.
Now, I told ya'll I specialize in soul fusion... so although I absolutely LOVE Asian cuisine (it's one of my favorites, actually). . I make MY food. I cannot tell you if it's authentic because that's not what I'm aiming for. Once you've tasted MY style of food... It's hard to go back. Stay tuned.
So you'll see this often. Whenever Hun helps me mise en place our mirepoix for dinner the vegetables will be cut more, uh... rustic, lol AKA more... BIG. You know, bigger than what I would do as a culinary arts graduate. Lol, but that's okay. He's supportive, a great sous chef, and I love him.
Now, let's get down to business.
I'll have to come back and provide you with specific measurements, being that I cook from the soul. I didn't plan on posting this meal so that's why it isn't a real "standardized" recipe. But... it was too damn good, for me not to.
Anyway, here we go.
Hun cutting celery, kale, garlic..
cut carrots, cabbage, broccoli...
I started a quick marinade for the tofu.
Vegan Chick'n broth, EVOO, sesame oil, tamari, ginger, liquid smoke + paprika.
Don't ask. Just listen. It works.
Then I popped it in the oven at 500 degrees. . and forgot about them (consciously)
Started the boiling water for the noodles. This is one pot so I did the noodles first. Set them aside and made the ramen in this same pot. Less dishes for us (well hun) at night, you know?
We work as a team. I cook, he cleans (the dishes, that is lol) + I put the food away.
I love that man... lol. Did I tell ya'll that already?
For the noodles I usually use ramen noodles (black rice or jade) or udon chow mein noodles (pictured). Since we had two partially full packs and lots of angel hair. I made both. Justice LOVES angel hair. So it was a win win for everyone.
checked on the tofu. Flipped them. popped them back in + neglected them some more.
(just kidding, please only treat your food with love + positive energy lol)
Vegan Chick'n boullian + Sesame Oil + EVOO
sautéed the onions.
Note to any husbands helping their wombman* cook. Keep the veggies separate please lol. That way, we can sweat the aromatics together and make sure the greens don't get overcooked.
Added in Carrots, Celery, + Garlic. All locally grown. All organic.
I also added some Tamari + Ginger
I then added some h2O
brought it up to a boil
I then added Thyme, Black Pepper, Nooch + More Fresh Garlic
Then I brought it down to a simmer.
Once back down, I added the cabbage, broccoli, kale + 1 ear of Corn (cut off the cobb + 1 can of organic corn)
Then I brought it back up to a boil.
Taste for seasoning at this time.
Add a little sea salt. A little more Tamari (or Soy Sauce), More Organic Ginger, A bit of rice vinegar + LOVE :-)
Don't forget to check and flip the tofu!
let your nose be your alarm clock.
fall in love with the aroma of the medicine you are creating.
create with love, and allow the food to heal you.
Let it boil for 1 minute or so. . .
Then reduce it back down to a simmer.
Man, it smells good.
Pay attention to the color of your broth. If it lacks color, it probably lacks depth in flavor.
Be sure to really caramelize your vegetables and taste as you go!
We're so cool. We mixed all of our left over noodles. Yum! Yay for texture and variety.
Be sure NOT to accidentally get egg noodles.

The flavors in this broth, were BANANAS. Seriously. OMG. You know I'm having more for lunch.
That's how you know it's good. We're eating Ramen in 93 degree weather. LOL

So.... I was craving something sweet. I remembered that me and Justice made some homemade Vanilla Bean Coconut Cream Ice cream in our new ice cream maker, the other day. That sounded good... but, I was craving something more. I decided to make some raw vegan salted caramel. Lol yes, you heard me.
Raw. Vegan. Salted. Caramel.
Except. . I needed to elevate it. I decided to make...
Okay, I'll tell you.
Raw. Vegan. Peanut Butter. Salted. Caramel.
Oh. My. Freaking. G.
It was NUTS! Literally! Lol (cornball)
1 Tbs All Natural Peanut Butter
2 TBS Maple Syrup (technically not raw. yeah, yeah.)
1/4 tsp sea salt.
mix it up in a bowl.
add some of your homemade VEGAN ice cream.
(recipe coming soon for that)
mmmmmmmm I can't wait to have some of that mom.
Now, stop acting like you're scared and mix that ish up.
Don't mix it. Chop it in. Make ripples. Make Swirls. Leave some plain ice cream for contrast.
Now OMG. Try not to orgasm right now.
Did you get that perfect little speckle of salt.
Right when you thought the caramel was too sweet.
Sweet. Salty. Nutty. Creamy.
Go try it. Right now.
I don't care how. Just make it happen. Lol
